Banana Bread

Ingredients
3 ripe bananas
(preferably very dark bananas)
3 eggs
1 lemon
200g cream cheese
70g vegetable oil
110g honey
Pinch of salt
80g brown sugar (or coconut sugar)
1 tsp vanilla extract
5g baking powder
2g baking soda
40g cornstarch
400g flour
1-2 bananas for decoration

Instructions
1. Start by preheating your oven to 180°C (350°F).
2. Using a fork, mash the 3 ripe bananas in a mixing bowl until they reach a smooth consistency.
3. Add the vegetable oil, eggs, honey, vanilla extract, cream cheese, and the zest and juice of 1 lemon to the mashed bananas.
Thoroughly mix all these ingredients together until well combined.
4. In a separate bowl, combine the flour, baking powder, baking soda, cornstarch, and a pinch of salt. Mix these dry ingredients together.
5. Gradually add the dry ingredient mixture to the banana mixture, stirring as you go, until you achieve a smooth batter.
6. Grease a baking pan with butter and lightly dust it with flour to prevent sticking.
7. Pour the batter into the prepared baking pan, filling it up to about 2/3 of its capacity.
8. For an attractive finish, decorate the top of the batter with slices of the remaining banana.
9. Place the baking pan in the preheated oven and bake for approximately 50-60 minutes. To check for doneness, insert a wooden skewer into the center of the bread – if it comes out dry, the bread is ready.
10. Once baked, carefully remove the banana bread from the oven and let it cool in the pan for a few minutes.
11. After the initial cooling period, transfer the banana bread to a wire rack to cool completely.
12. Once fully cooled, slice and serve the delicious banana bread for a delightful treat.
